The ingredients for this recipe are relatively natural to acquire, heck; you might already have them in your kitchen.

Ingredients

Potatoes

8 ounces cream cheese, at room temperature

One tablespoon unsalted butter

A quarter cup sour cream

Half teaspoon garlic powder

Pinch of grated nutmeg

Salt and freshly ground black pepper

Directions

  1. Wash, peel, and cut the potatoes into smaller pieces. Put the potatoes in the pot and fill with water. Make sure the water in the pot covers the potatoes.
  2. Boil the water under high heat and then lower the temperature to medium and simmer the potatoes until the potatoes get so soft that it would be easy to mash them. You would know the potato is ready when a fork pierces them easily. This can take 20 to 25 minutes.
  3. Remove the hot water from the potato by draining in a sieve and return them to the pot. Stir a few times to remove steam from the potatoes in the hot pan to remove excess moisture.
  4. Mix the butter, cream cheese, and sour cream to the pot. Mash the potato with a potato masher until it results in a smooth mixture. Avoid over-mixing, which can make the potatoes sticky, but don’t be afraid to mash them until they are nice and soft.
  5. Add nutmeg, salt, garlic powder, and pepper to the mixture in appropriate quantities to season the broth. Mix to combine.
  6. The mashed potatoes can be stored in the refrigerator for up to two days. It can then be reheated in a 350°F oven. Cover the mashed potato with foil before reheating.

Corn-starch

To make these roasted sweet potato fries, simply:

  1. Cut your chips into small sizes like the shape of evenly sized matchsticks
  2. Leave the chips in water for at least 30 minutes. Then rinse, drain in a sieve and pat dry.
  3. Put the fries to a dry bowl or ziplock bag and toss evenly with oil.
  4. Then toss the fries with your corn starch/seasoning mixture.
  5. Transfer to a parchment-covered baking sheet and spread out the fries in a nice even layer.
  6. Bake it until the fries become crispy. Flip the chips to ensure that all sides are fully affected by the oven.
  7. Remove the baking sheet from the oven, add salt to the fries, and rest for 3-5 more minutes.
